Mexicana® Vegan Mushroom, Sweetcorn & Cheeze Fritters

This is a brilliant, easy and quick
recipe.
If you fancy a quick snack, these are for you!

 

INGREDIENTS:

• 100g flour
• 1/2 tsp baking powder
• 50ml plant milk
• 100g grated Mexicana Vegan
• 200g mushrooms (grated)
• 1 can of sweetcorn
• 3 spring onions (finely chopped)
• 1 red pepper (finely grated)
• Salt and pepper

 

   
   
SERVES:

METHOD

Mix the flour, baking powder and plant milk together to make a batter.

Add the cheeze, mushrooms, sweetcorn, spring onions, red pepper and salt and pepper.

Mix everything really well.

Heat a frying pan with a little oil and spoon in a dessert spoon of the batter mix. Cook for 3 minutes either side on medium heat.

Pop on some kitchen paper and serve warm or cold
