Applewood® Vegan and Caramelised Onion Toasties

A super melting vegan toastie, perfect with a crisp salad.

INGREDIENTS:

1 medium onion, peeled and thinly sliced
1 tbs olive oil
1 tsp dark brown sugar
Salt & pepper
1 tbs of good quality balsamic vinegar
2 thick slices of sourdough bread
4 slices of Applewood® Vegan

METHOD:

Preheat the grill to high.

1. Heat the olive oil in a large frying pan over a medium heat. Add the onions, dark brown sugar and season with salt and pepper. Stirring regularly, fry for 5-6 minutes, until softened and lightly coloured.

2. Add the balsamic vinegar and continue to cook for a further 5 minutes until the onions are well coloured, sweet and tangy. Check and adjust the seasoning if required.

3. Toast one side of each slice of bread. When golden remove from the grill and turn over the bread.

4. Spread half of the caramelised onions over the un-toasted surfaces, top with the Applewood® Vegan slices and remaining caramelised onions. Return to the grill until the cheeze is melted and nicely coloured, approximately 4-5 minutes.

 

Serve immediately with a salad.
